"Our Holmdel location was inspired by the boutique hotels of Miami Beach," he said. "The eclectic mix of house music, graffiti art, clean lines, and communal table set the stage for the perfect social brunch."

The Marlboro location was inspired by "a SoHo, or Williamsburg, Brooklyn café," he added. "We felt that with so many New York transplants in our area, the neighborhood would appreciate the vibe." The partners are considering opening a third location next year, Kosta said, noting that "the mindset was to always have multiple locations. The brand was designed specifically for that reason. 

"Our first location in Marlboro had history," he explained. "It was a breakfast spot in town for over 40 years. We felt this was a great fit for us to launch the brand."

Opening the second Over Easy Kitchen in Holmdel "was a natural fit," Demetri added. "Our collective businesses including Patricia's of Holmdel and The Gramercy at Lakeside Manor have been part of the Holmdel Community for over 15 years. Paying true attention to detail is how we go into all our businesses, every day," he said. "The economy will always be a forever roller coaster. Our venues are built to be consistent, and guests appreciate that."


 



Over Easy Kitchen is open from 8 am to 3 pm, seven days a week. In Marlboro, people sometimes wait for a table, which encouraged the trio to open their second location in nearby Holmdel. Over Easy Kitchen's weekend specials "have been a big part of our success," Kosta said. "They are a fusion of seasonal ingredients and come from the creative mind of our chef, Benjamin Gonzalez. Our specials are the epitome of eating art."

The regular menu is also noteworthy, he said, explaining that it was "designed around fresh and clean, seasonal ingredients. We support some local farms, offer grass-fed beef, as well as Bell & Evans organic chicken. The brioche we use for our French toast is imported from France, and all our omelettes are prepared with EVOO (extra virgin olive oil)." There are classic breakfast items such as pancakes, waffles, and eggs any style (including over easy, of course!) and newer trends like avocado toast and quinoa cakes.
