In 2010, on the heels of my New York restaurant Marea winning a James Beard Award for Best New Restaurant in the US from the James Beard Foundation, I was asked to consider opening a venue in a building in New Jersey that was created by Theodore Vail of AT&T in 1918. I was immediately struck by the innate beauty and possibility of the structure, its surroundings, and the wonderful community of Morristown. I had always believed that a great restaurant should grow from the fabric and culture of its physical location and that it should be truly unique in its personality. The Vail Mansion was, to me, the perfect canvas to paint a beautiful picture of culture and spontaneous conviviality.

Agricola

Like all our favorite foods, Agricola is fresh, down to earth and full of flavor. We think food is a universal language—it brings us together and nourishes us. In Latin, “Agricola” means “farmer” which embodies our farm to table spirit and our dedication to community and comfort.

Café Panache

Located in the center of downtown Ramsey, Café Panache serves eclectic, New American seasonal cuisine, in an elegant, welcoming setting. Please feel free to bring your own wine & spirits, as we are a BYO restaurant.

Ninety Acres

Ninety Acres celebrates the whole experience and art of fine food and wine, reveling in the process of cultivating, harvesting, preparing, and savoring each bite in the beautiful landscape where it was grown.

Elements

With just nine tables in the main dining room – all within view of the open kitchen – and seating for 28, the new space unites the front and back of the restaurant, allowing for the team to provide guests with thoughtful, incomparable service and a remarkable dining experience. The elements team places a superlative focus on fresh ingredients – many of which are sourced from local farmers and producers – utilizing progressive, modern techniques to draw out the purest flavors, and transform classic dishes into something completely new.

Heirloom Kitchen

Heirloom Kitchen is now a weekend restaurant. We offer chef’s table seating around our kitchen island where guests can watch Chef Viana and his team prepare and artfully present their dishes. Communal seating at our Farm Table and more traditional dining options are also available.

12 Farms Restaurant

A farm-to-table restaurant that makes fresh homemade pasta, serves grass-fed beef, and focuses on local, organic-when-possible ingredients. 12 Farms is dedicated to delivering high quality, delicious food at reasonable prices using locally sourced produce and proteins.
